The Perfect Watermelon Salad
As the school year comes to a close (and graduation is literally 11 days away... (tearing up)) everyone is trying to squeeze in as much time with each other as possible. While all my girls and I live on the same street, things get overwhelming with the likes of classes, exams, social life, etc., so we don’t spend as much time with each other as one would expect. So, circumstantially, it’s the last week of exams and we plan a potluck dinner at the picnic area literally 100 yards from all of our houses.
It was really the perfect evening for a get-together, plus our landlord has the most amazing set-up down there. A cute little gazebo area with picnic tables and strings of lantern lights—what more could you ask for!
Anyway, in the midst of tears, re-telling our best memories of college and trying to figure out when we will all reconvene again, we each brought a dish for one of our many farewell dinners.
Admittedly, slightly overwhelmed with a paper I still at had to write, I ran (really, I drove but was probably speeding… don’t tell….) to the grocery store for some ingredients. On a whim I bought cucumbers, watermelon, fresh mint and limes. Sounds summery right? That’s what I was going for.
After cleaning all my ingredients, slicing and dicing, I put everything in a big bowl and topped it off with fresh lime juice, balsamic vinegar and pepper. It was a hit, and truly a refreshing dish. I’ll absolutely be making it again this summer!
- 1 Watermelon, diced
- 4 Cucumbers, sliced
- 2 Limes, squeezed & mixed with 2 tsp balsamic vinegar and some pepper
