A Healthy PB&J?
Channeling my inner child in an adulthood (ish) way has rather effortlessly led me to my now favorite go-to breakfast and afternoon snack. Sunflower butter and jam on Trader Joe's GF Crispbread is not only healthier than it's elementary school, lunchboxed counterpart, it's full of fiber and natural vitamin D.
On a recent horrendously rainy day--one which has become rather commonplace here in New York, making it feel more like Seattle or London than it does the Northeast-- I was pleasantly surprised to walk into an empty midtown grocery that religiously has a line wrapped through the entire store. As I aimlessly strolled in unprecedented peace through the aisles of Trader Joe's, I had the unique opportunity to peruse all the unique goods they have instead of quickly adding eggs and almond milk into my cart before beelining for the checkout line.
Not only did I check everything off my grocery list that day, I came across the Norwegian GF crispbread, which has now unapologetically replaced my conventional gluten free toast. The bread, which really is more like a giant cracker, has ingredients like sunflower seeds, oat flakes, sesame seeds, flax seeds, rice bran, honey, potato fiber, and more.
Unlike typical "toast," this crispbread is full of good ingredients that actually make my stomach full and satisfied in addition to giving me tons of energy to power through the day. Instead of empty calories and sugar that GF bread usually has, this crispbread has 3g of fiber per cracker, and the ingredients are TASTY. The crunch-factor alone was initially enough to keep me coming back for more, but the lasting energy, instead of crashing 40 minutes later, has made me a die-hard fan.
My newfound fave for a semi-sweet and definitely savory snack: GF crispbread, unsweetened sunflower butter, and raspberry jam. For those with full-on salt cravings (I have those too), use the crispbread to replace the toast in avo toast. Make sure you mash the avocado before applying to the cracker, otherwise it will break, and top it off with sprouts, salt, pepper, lemon, chili flakes, and a squeeze of lemon.
