Grain-Free Avo Toast (RAW)
Avocado toast is always an easy and delicious option for breakfast, lunch or dinner, but substituting just one ingredient puts a fun and healthier twist on the not-so-basic meal. Instead of using toast, slice a raw sweet potato into bread-like widths and toast the pieces as you regularly would. Once fully and perfectly crisp, add avocado and any other toppings of your choice. Voilà!
Note: depending on your toaster, oven, or toaster-over, getting the sweet potato to the desired softness might entail using higher heat or a few extra toasting cycles.
- Uncooked sweet potato
- Olive oil
- Top with fresh arugula
